Salt marsh vegetable and brown shrimp stir fry

It is coming to the end of the season for salt marsh vegetables, but we had a great selection this weekend.  Marsh samphire is the one everyone knows but there are a few others worth searching for.

We found;saltmarsh plants

  • Sea Aster
  • Sea Purslane
  • Shore Orache
  • Annual Sea Blite
  • Marsh Samphire

Here is a really simple recipe that makes a great supper dish and takes about three minutes to cook. You could serve it with rice or noodles.

Stir fry of salt marsh vegetables with brown shrimp.

200g Salt marsh vegetables ( we had the selection above but you could use just samphire)
1 large Banana shallot finely sliced.
1/2 tsp Dried chilli flakes.
150g Cooked and peeled brown shrimps (prawns will do).
Dark soya sauce.
Lemon juice.

Put your wok onto a medium high heat and add a little veg oil. When the oil is hot add the sliced shallot and chilli flakes and cook for 1 minute, stirring occasionally. Now increase the heat to high and add the sea veg.  Cook on a high heat for 1 more minute stirring fairly regularly so nothing burns. Now add two tablespoons of soya sauce and the shrimps and cook for until the shrimps have warmed through ( about a minute). Season with a squeeze of lemon and serve.
